I mean, those jobs where he took one movie and combined it with something else was one thing...but movies where he did all by himself like Honor and Glory (aka Angel of Kickboxer) and Undefeatable are among the worst films I have ever seen.
So I'm curious here:
Did this man know that he was not able to produce good movies or was he like Ed Wood where it never really dawned upon him that he was no good?

I think he was more worried about his budget than the quality of the work, otherwise he would have focused more on quality rather than quantity. He was the walmart of kung fu film makers.

Ho reminds me of Jerry Warren, a US filmmaker whose idea of a film was to take a Mexican or Swedish film and edit out all the good bits, replacing them with VERY DULL narration. And his actual films are even worse: The Incredible Petrified World, The Wild World of Batwoman...
I reckon Ho was laughing all the way to the bank

I doubt Ho gave a $hit about anything other than the quickest way to make a few bucks.
