Fukcin nice work man!! you probaby listed it (I am bad when #'s reach over 40 :p), but the only one I can think of right now that I don't see on your list is Gods, Gangsters and Gamblers aka Return Engagement (hkmdb.com lists Gods Gangsters Gamblers aka Century of the Dragon, even after I emailed them of their error and they said it was corrected).

I'll have to check out Hunting List. the others I've seen, but don't remember any 2 guns used, I'll have to rewatch them. except for Exiled, I've seen it around 20 times and unless I'm blind, nobody ever used 2 guns at once in it!

The Mission, Longest Nite, Purple Storm (may be), A Moment of Romance, City Hunter, Island On Fire, Lee Rock, Full Contact, Treasure Hunt (1994), Once a Thief.

I agree The Big Heat is engrossingly awesome

The Longest Nite and Full Contact have no action scenes with double guns.

Yeah mark I definitely remember 2 fisted gunplay in the final shootout of Gods Gangsters and Gamblers (though whenever I am sure of something, that's when I'm wrong:p).

I remember 2 guns used in the final shootout of The Longest Nite. doesn't Tony have the shotgun and Lau Ching wan has 2 guns? I'll pop it in tonight just to make sure. always a pleasure to rewatch that movie.

nope, in the final shootout of The Longest Nite, Lau Ching-Wan uses a single Desert Eagle! I do remember the final shootout of Return Engagement being really good, I just don't remember any 2 gun action, time to rewatch it! now that Delirious mentioned Island of Fire I remember it but apparently it's a Taiwan production not HK. and as Milkyway said, neither The Longest Nite or Full Contact feature any 2 gun action, but they're both awesome films all the same! as for Once a Thief, there was a brief shot of a guy running with 2 pistols in the finale, but it never showed him firing any shots, so I didn't count it. by the way, while checking through various reviews and photos online, I've found three more films that I haven't seen which show screenshots of 2 guns being held (The Powerful Four, Point of No Return [Jacky Cheung], and Unmatchable Match) time to check them out. lastly, although I purposely didn't mention it, there was a scene in Boys Are Easy where Tony Leung Ka-Fai is dressed like Mark from A Better Tomorrow, firing 2 guns, but it is only a joke and not a real action scene so I didn't count it!

Fight back to school part 1 and 2 by Chow Sing-Chi. Pretty sure Chow himself wields two guns in at least 1 of them.
What about God of Gamblers 2 at the part when Andy is ambushed in the tight swim suit? I'm not sure on this one as well.
Francis Ng also contributes some to the genre: A War Named Desire, 2000 AD (may be) and I will rewatch Bullet over Summer to see if he ever wields dual pistols.
Also somebody checks Black Mask, Time and Tide, Blood Brothers (2007)

none in Blood Brothers, and I'm pretty sure none in Bullets Over Summer or 2000 A.D. I'll have to rewatch Black Mask, it's been a long time since I've seen it...same with God of Gamblers II and Fight Back to School 1-2! Time and Tide unfortunately doesn't have any in the finished film, but there was a shot of some guy in the trailer with 2 guns which was cut from the final film...Tsui Hark mentions that some action was cut on his audio commentary! anybody ever seen the movie 'Tian Di' with Andy Lau? the vcd is out of print, but I ordered the Taiwanese dvd today...any word on whether this is uncut? from the sounds of things, the movie has an extremely bullet-riddled finale!
